If you are looking for something a little different or truly Australian, Casalinga offers a range of game meats including wallaby, venison, quail and goat. Again, all these products provide rich flavours due to being pasture-fed and free-range. Game meats are very easy to cook, are low in fat and an environmentally conscious choice of meat.
We are always trying to source unique Tasmanian produce and when the season is right we offer Rabbit and Mutton Bird (Flinders Island Moon Bird).
Wallaby
Game meats are very low in saturated and trans fats and therefore an excellent choice for those who need a meat choice that is low in cholesterol and promotes a healthy heart. Sharing the same visual traits as venison, wallaby is one of nature’s finest meats, it’s sweet mild flavour and fine texture is earning it the reputation as ‘the pinot of red meats’. Tasmania is the only state in Australia where it is legal to harvest wallaby.
Quail
Tasmanian quail is full of flavour in a tiny package! A game bird that is commonly raised in captivity, this delicious meat is sought after by high quality chefs and restaurateurs throughout Australia. Tasmania offers an ideal climate for growing conditions. The primary producer in Tasmania has over 30 years’ experience in farming quail offering premium products and never compromising on quality. At Casalinga we then smoke the quail with citrus wood shavings ready to eat or you can add it to your favourite quail recipe.
Venison
We pride ourselves on sourcing the free range Fallow Deer within Tasmania. Our venison is harvested from deer that have spent their lives feasting on the rich slopes from around Tasmania. With a distinctly dark burgundy colour and well known for their tender eating texture, it has a mildly delicate flavouring that does not need to be dressed up with any strong seasonings. Tasmanian Fallow deer is low in fat, high in protein, and stacked with vitamins and iron. Fallow deer are primarily grazers, preferring grass and forbs, but may also eat twigs and evergreen needles in winter.
Goat
The Boer goat is a breed of goat that has been specifically bred for meat and is regarded as the world's premier meat goat. Goat meat is low in saturated fat and cholesterol and is growing in popularity and demand in both the domestic and export markets.
